Chocolate Wacky Cake

I am a huge fan of chocolate cake and use any excuse to have it. Seeing the Chocolate Wacky Cake recipe on White Lily Flour's Instagram feed, I had to give it a try.

The Backstory

This cake is dairy-free, egg-free and no-bowl. That makes it great in a pinch provided you have apple cider vinegar. It makes a 9x13 inch single layer cake. The no-bowl is because you mix everything right in the baking pan. It was perfect to satisfy my sweet tooth given how low I am on supplies. 

The Bake

Similar to a dump cake where you dump everything in a bowl and mix, you mix everything in the baking pan but you put the liquid in 4 wells you create with the back of a spoon. It takes no time to mix up and then pop in the oven for 30-35 minutes or until the toothpick inserted in the center comes out clean. Then comes the hard part, you have to let it sit for 1 hour. That's right, 1 full 60 minute hour. I popped it in before dinner and by the time I was ready for dessert the hour was up.

The Result

Oh my!  This may be my new snacking cake!  Fluffy, moist and chocolatey (probably due to the coffee). I only put in 1-3/4 cup of sugar instead of the 2 cups. It was still wonderfully sweet and did I mention chocolatey. I opted not to dust with confectioner's sugar nor top with frosting.  It would be yummy though.

Heck yeah!  I am going to try to half it though and instead of making an 9x13 inch cake, make an 8x8.
