I have been looking at the Strawberry Almond Flour Cake recipe for awhile. I have a had a few different almond flour bakes and I am starting to come around to it so I decided to finally try this recipe.
The Backstory
The Strawberry Almond Flour Cake on kingarthurbaking.com is a naturally gluten-free, fluffy cake made with almond flour. I have been looking at this recipe as an alternative for my health conscious family and friends. This is not vegan, it gets its moisture from eggs, no milk nor oil.
The Bake
I kept this bake dairy-free by using the option of coconut oil to grease the pan. I didn't have coconut flour (not a fan of coconut), so I followed the option of all almond flour. I believe this is the first cake that I've made using egg whites.
The Result
A surprisingly smooth, not gritty, tasty cake. This surprised me since some of the almond flour recipes I have had I was not a fan of the texture, this one was good. I didn't have any fresh strawberries to put on it so I added a few blueberries. The bottom of the cake comes out with a nice little crunch from the sugar that was used to coat the bottom of the cake pan.
Will I Bake It Again
Yes! I will bake it again with fresh fruit topping. I might even try it with baking sugar alternative.
