Tackling Brian's Favorite Banana Bread

The Backstory

I attend baking school from Bake from Scratch and Williams Sonoma. It is a great community of bakers, sharing tips, and bakes. The lesson for this is week is Brian's Favorite Banana Bread.

The Bake

This is the first banana bread recipe that I've seen with sour cream, nutmeg and diced bananas. Naturally, banana bread has mashed ripe bananas. This one has diced bananas as a mix-in. I don't know about you but I never seem to have ripe bananas when the mood hits me to bake banana bread. I saw on a favorite baking show a contestant ripened their bananas in a few minutes. While it is best to allow them to naturally ripen, placing them in a 300 degree oven for a few minutes does the trick in a pinch. I decided to add dark chocolate chips when I added the diced bananas. 

This recipe has a lot of ingredients but it is worth it.

It includes:

  • All-Purpose Flour
  • Kosher Salt
  • Baking Soda
  • Ground Cinnamon
  • Baking Powder
  • Ground Nutmeg
  • Mashed Very Ripe Bananas
  • Light Brown Sugar
  • Neutral Oil
  • Sour Cream (room temperature - new to me)
  • Eggs
  • Unsalted Butter (my favorite is Kerrygold)
  • Vanilla Extract
  • Diced Ripe Bananas
  • Dark Chocolate Chips (I added this to the recipe)

The Result

A yummy banana bread done in a new-to-me way. It was not as sweet, a good thing, and I can see adding all kinds of add-ins.
