Vegan Fudge

Making a treat for a special little boy ...
The Backstory
Dear friends of mine have two lovely children, a boy and a girl. Their little boy loves chocolate but has a few allergies. I really wanted to make a holiday treat for him, so I thought vegan fudge would be good.
The Bake
Fudge is a yummy treat that is pretty easy to make. When I started baking, I started with fudge. It is three ingredients and allow it to set. To make this special fudge, I used sweetened condensed oat milk, Enjoy Life semi-sweet chocolate chips and vanilla extract. The Enjoy Life chips are free from 14 allergens and are also good for keto friendly baking.
Switch the extract, add nuts, top with peppermint or any of your favorite additions.
The typical recipe is a 15 oz can of sweetened condensed milk heated to melt chocolate morsels, stir in vanilla before adding to an 8x8 pan with parchment paper lifts (hanging over the sides for easy release from the pan. Pour the mixture in and refrigerate for at least 1 hour or until set. Once set, cut into pieces.
But the sweetened condensed oat milk needed for this recipe comes in a 11.25 oz can. So I adjusted the chocolate a bit and voìla yummy vegan fudge.
I wrapped each piece individually and froze them before gifting (they had to travel)
The Result
Lots of yummy chunks of fudge!
Fudge can be stored covered in the refrigerator for 1 month or frozen for 6 months.
Will I Make It Again
I believe so. But there were so many yummy chunks, it will be awhile to get through all of them.
