National Chocolate Chip Day

I could not let one of my favorite holidays pass me by - National Chocolate Chip Day!

THE BACKSTORY

Not to be confused with National Chocolate Chip Cookie Day which is August 4th. 

THE BAKE

There are many, many, many, did I say many, chocolate chip recipes to help celebrate this wonderful day. I fell back on a favorite, chocolate chip cookies.  I am using the America's Test Kitchen Baking for Two recipe so I only have a dozen. I am also using Lindley Mills Super Sprout Wheat. This is a departure from my normal King Arthur Unbleached All-Purpose Flour.

Ingredients

  • 5 tablespoons (72 g) unsalted Kerrygold butter, melted and cooled
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon Diamond Kosher salt
  • 1/2 cup (99 g) light brown sugar
  • 1/4 cup (49 g) granulated sugar
  • 1-1/2 teaspoon Nielsen-Massey vanilla extract
  • 1 large egg
  • 1 cup chocolate chips - I used Trader Joe's 72% dark chocolate chips

Directions 

  1. Preheat the oven to 350°F. Line a cookie sheet with parchment paper or silpat.
  2. Melt and cool the butter
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  4. In a large bowl, whisk together the brown and granulated sugars
  5. Whisk the melted butter into the sugars
  6. Beat in the vanilla extract and the egg; scrape the sides and bottom of the bowl
  7. Add the flour mixture folding to combine
  8. Fold in the the chips
  9. Using a 2 Tbsp cookie scoop place dough, place on the prepared baking sheets, leaving 2" between them. Using a flat-bottomed glass, flatten the cookies to about 1/4" thick
  10. Bake the sugar cookies for 13 to 16 minutes — the center will be a little light and soft. The edges of the cookies will just barely begin to brown
  11. Remove the cookies from the oven and cool on the pan for 5 minutes, before transferring to a rack to finish cooling completely
