For those holiday leftover sandwiches I thought I would bake one of my favorite breads, pumpernickel.

I like baking bread and I am continuing my learning journey for all types. After all of the holiday cooking and baking, I was a little short on all of the ingredients needed to make one of my favorite breads, dark pumpernickel. Surprisingly enough I did have a the dark pumpernickel mix from gift box that including a variety of King Arthur products.

With the mix it is simple to mix up needing only 2 tablespoons of softened butter or oil and 1.5 cups of warm water, the rest is in the box including the yeast.

The King Arthur Baking Dark Pumpernickel product page also includes helpful videos, that I wish I'd looked at before I baked, to help make the bread a success. Mine didn't rise as much as it probably should have but it sure was tasty.

I still want to make it from scratch and there is pumpernickel flour on the way to me. In the meantime, I am enjoying this dark pumpernickel with my favorite Kerrygold Salted Butter.
