A new dish to add to my rotation thanks to a recommendation from a friend from Germany.
Kaiserschmarrn or Scrambled Pancake, is an Austrian dessert popular in dessert according to the Plated Cravings website.
Whipping Egg Whites
I admit I was a little intimidated. Why? I have not yet mastered whipping egg whites to stiff peaks. I wonder if my mixer needs maintenance. Yeah, that's my excuse for having made this recipe twice.
The first time, I accidentally overwhipped the egg whites and the egg yolk mixture - ugh!
The second time was a better, but I should have whipped it longer. I was afraid to, as I experienced in the first attempt how quickly it can go from whipped to overwhipped.
Dessert?
This recipe has raisins (soaked in water or rum), butter and sugar - all good stuff. I need more practice and will happily do so! This dish is made on the stovetop not in the oven and is quick to make. It was tasty and I will definitely add it to the rotation of yummy treats. It is referred to as a dessert but I plan on indulging on a lazy weekend morning, a breakfast dessert!
