Perhaps my new favorite chocolate cake, but definitely my new favorite birthday cake.
THE BACKSTORY
This cake is oil-based and really chocolatey. I needed a less sweet but still tasty. Enter Ermine Frosting. Curiosity piqued, I dived in. Conceptually, it is similar to creating a roux, like when creating creamy mac n cheese, except sweet.
THE BAKE
I am big on butter all day, so I was not sure how I would feel about an oil-based case. The cake is amazing. Chocolatey and moist. Bonus is that the frosting is not overly sweet.
The Ermine Frosting recipe used is the chocolate version from King Arthur Baking. Instead of semisweet chocolate, I used 60% dark chocolate since it is what I had on hand.
THE RESULT
O-M-G! Do I say that too much? I absolutely loved it. I shared it, somewhat reluctantly, and the reaction was similar to mine.
WILL I MAKE IT AGAIN
Heck yeah! I am queuing it up before the holidays. Thinking I will try as cupcakes for better portion control. Not sure that will help, but gotta try.
