Apple Pie Spice Cookies

Craving an apple pie but no time to make it, these apple pie spice cookies hit the spot.

THE BACK STORY

 The temperatures have started to drop and with that I start thinking about fall flavors and memories of apple picking with friends. Hunting through the pantry I was excited to find I had everything I needed to fill the house with the scents of cinnamon and apple.

With a little coaching from Chef Christy of The Treehouse Pie Company, my pie queen, and armed with my spice jars, I began my first ever batch of apple pie spice cookies.

Ingredients

  • 2-1/4 cup All Purpose Flour
  • 2-3 tsp, to taste King Arthur Baking Apple Pie Spice (cinnamon, nutmeg, allspice)
  • 1/2 to 1 tsp ground ginger, to taste
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt flakes
  • 1-1/2 stick room temperature unsalted butter (if you use salted butter, eliminate the salt)
  • 1 cup sugar
  • 1 large egg
  • 1/4 cup unsweetened applesauce 
  • 1 tsp vanilla extract

Coating: sugar with apple pie spice to taste

Directions

  1. Preheat over to 350 degrees
  2. Line baking sheet with silpat or parchment paper 
  3. Whisk together the flour, apple pie spice, giner, baking powder, baking soda, and salt
  4. Using the paddle attachment, on medium-high speed, in your stand mixer cream the butter and sugar until light and fluffy, approximately 2-3 minutes
  5. Add egg, applesauce, and vanilla extract, then beat until smooth, scrape sides as necessary
  6. On low speed, slowly add the flour mixture until just incorporated, careful to not overmix.
  7. Use a 1-1/2 cookie scoop to form dough balls
  8. Coat them in the sugar apple pie spice mixture
  9. Place on the baking sheet 2 inches apart
  10. Using a glass or mug, slightly flatten each cookie
  11. Bake until edges are set, 11-14 minutes depending on your oven
  12. Cool for 1-2 minutes on baking sheet before moving to wire cooling rack

Cookies can be stored in an airtight container for up to 5 days, though I doubt they last that long

THE RESULT

 With the sugar spice coating, the cookies have sparkly crisp outside and soft inside. You get all the flavors of an apple pie. The recipe above makes 30 cookies.

Definitely! I received the cutest video from one of my taste testers where her grandson gave them an enthusiastic 10 out 10! 

Update 16-Nov-2024

I made gluten-free apple pie spice cookies today using King Arthur Baking Gluten-Free Measure-for-Measure.  I upped the apple pie spice by 1-1/2 tsp and an extra 1/2 tsp of cinnamon. They were a big hit as well.
