Small Batch Keto-Friendly Rolls
The challenge: A tasty Keto-Friendly Roll. Is it possible?
The Back Story
A few weeks back, I tried the Keto Muffin Mix from King Arthur Baking. The coconut used, was off-putting for me since I don't like coconut flavor that came through. Every since then I have been thinking about trying to make keto-bread-rolls-treat-something that tastes good. Off to the KAB site, I order the Keto Wheat Flour along with Baking Sugar Alternative. Grabbed a recipe and off to the mixer I went.
I approached cautiously. I've been having a time of it with my breads not rising and such. I was not overly confident for this one. Given the bread rising challenge, I tried putting the dough in the oven with the light on. A technique I read to create a proofer. Unlike the last time I tried it, I didn't preheat the oven to 200 F before. Just the cold over and the oven light. I was so excited to see the fluffy dough, so much so, I punched it down before remembering to take a picture (doh!).
With that, I crossed my fingers that my luck would continue. I was so happy when the rolls came out of oven big and golden. Now before I get too excited, how do they taste?
The Result
Taking a small step back, the recipe I used was the Keto-Friendly Rolls Recipe.
They came out of the oven nice and pillowy. The moment of truth, how do they taste?
I was a little disappointed. Looking at them I thought they would be yummy. The texture is as expected but overall the taste is bland. My first thought was that more salt is needed. The structure is awesome, push the pillow...I mean roll... and they pop back up. I didn't notice an after taste from the Keto Flour and Baking Sugar Alternative, but it does taste different - not bad just different.
Will I make it again?
Yes, it is a good base. I will tweak the recipe a bit to fit my tastes (starting with additional salt). The size was perfect for an oversized slider bun. I feel I am close...

Made another batch of these keto-friendly rolls using the King Arthur Baking Keto Flour and Baking Sugar Alternative. Not as golden brown, it could be because they were placed on the top oven rack instead of the middle rack. Either way a decent substitute, especially with a bit more salt and salted butter slathered on.
