I like brownies. My friends like brownies. But, my friends have developed a late in life allergy to gluten. We are getting together for the holidays soon and I, of course, want to take something. Combing through my favorite sites, I decided to use the Almond Flour Brownie recipe from King Arthur Baking.
Not being a huge fan of almond flour, I was a bit skeptical. Before preheating the oven, I read through all of the comments and decided to make a few adjustments.
Tweak #1
The first adjustment was to add 1 teaspoon of espresso powder to enhance the chocolate flavor.
Tweak #2
Following the suggestions from the other bakers, I reduced the sugar to 1 cup. I also didn't use table salt but the Diamond Kosher Salt Flakes that I purchased specifically for baking.
The Outcome
The King Arthur Baking yields fudgy brownies, my favorite. How did these turn out? Pretty good.
Other suggestions from the recipe comments include:
Replace the melted butter with olive, avocado or oil
Replace the melted butter with vegan butter
Replace sugar with baking sugar alternative, monkfruit, or coconut sugar
