Vegan Chocolate Truffles
While technically not a bake, who doesn't love chocolate?!
Often comments come in about bakes that work for alternative diets. So, when the Vegan Chocolate Truffles recipe from Dessert for Two hit my inbox, I figured why not try it. It only has three ingredients and no refined sugar. Silly me. Of the technically 4 ingredients including the optional cocoa powder, I only had half of the ingredients in-house.
So dried plums or prunes were easy to get but the 100% cacao however took more work than I'd expected. Once I had the ingredients, they were quick to make. HOWEVER. Because I decided to roll them in cocoa powder, it was VERY messy. My nicely rolled truffles ended looking like lumpy clumps. Ugh! And it seemed like I was still cleaning of stray chocolate powder a couple of days later.
I think I did something wrong because the lumpy clumps didn't really hold their shape and looked nothing like the pictures on recipe. Maybe my chocolate was too soft when I mixed it into the prunes (sounds weird saying that)? I don't know. Aside from the look, how did they taste? I had way too much cocoa powder on the outside. This is UNSWEETENED cocoa powder, not very pleasant to me. Getting past that, was pretty good. Didn't taste prune then chocolate, just tasted chocolate. It wasn't bitter thanks to the honey - make sure you get GOOD honey. They are rich so, having more than one wasn't happening. I think I want search out other recipes before trying this on again.
