King Arthur Baking Keto Muffins

January 5th is National Keto Day. I have friends who sometimes follow a keto diet but still like their baked goods. With that in mind, decided to try the Keto Muffin Mix from King Arthur Baking.

Since this is the first time making this recipe, didn't make any changes. The mix makes 12 muffins or a 9"x5" loaf.  From your pantry you will need 4 or 5 large eggs (muffins vs loaf), 1/2 cup vegetable oil and 1 cup of water or unsweetened almond milk (to keep it keto). I was thrown a little bit by how thick the dough was and checked the directions a couple of times to be sure it was expected - it was.

It was a quick, simple bake. The kitchen smelled like...well...muffins, baking. They rose well. Browned nicely.

The mix contains coconut. Not a lot, but as someone who doesn't like coconut, I noticed...

 Overall, they are not bad tasting (aside from the coconut). If you're on a keto diet and you add your favorite mix-ins, a good alternative. I smeared it with Kerrygold Salted Butter (it fixes everything, right?!). For my oven, I needed to bake a minute or two longer, the toothpick came out clean.
